Challah – May 9, 2024

Challah is a slightly sweet, eggy bread with a consistency and taste similar to brioche. According to Jewish tradition, challah refers to a section of dough which is separated after kneading to be given as an offering at the Temple.

In this class, we will show you how to make your own rich and soft challah bread from scratch. You will learn how to prepare the dough, braid it, and bake it. Take it home to enjoy it by itself or slice it and make the best French toast breakfast for you and your family.

 

 

Croissants – May 16, 2024

A croissant is a laminated, yeast-leavened bakery product that contains dough/roll-in fat layers to create a flaky, crispy texture. Croissants belong to the Viennoiserie or pastry category of baked goods along with brioche, Danish and puff pastries. Learn to prepare your own laminated dough and transform it into a selection of sweet and savory croissant creations. You will learn to make plain croissants, chocolate croissants, cookie croissants and almond croissants.

Easy Entertaining – May 23, 2024

Learn how to make great and simple appetizers to serve at your party. We will make devil eggs, cilantro mousse, bacon wrapped dates, goat cheese grapes, and phyllo baskets.

Tapas – June 6, 2024

A tapa is an appetizer or snack in Spanish cuisine. Tapas can be combined to make a full meal, and can be cold or hot. In some bars and restaurants in Spain and across the globe, tapas have evolved into a very sophisticated cuisine. In this class you will learn how to make some of the classical tapas like gazpacho, croquetas de pollo, tomato with goat cheese, gambas al ajillo and tortilla espanola. We will be also demonstrating how to make paella

Spring and Summer Pies – June 13, 2024

A pie is any dish enclosed in a pastry crust, typically baked in a shallow, round pan called a pie dish. Pies are usually made with sweet fillings, like fruit or custard, but they can also be savory, like chicken pot pie.

In this class you will learn how to make the perfect flaky pie dough, and make a couple of pies like fruit filling pie, key lime pie and banana cream pie

Puff Pastry – June 20, 2024

Puff pastry, also known as Pâte Feuilletée or feuilletage in French, is a very delicate and rich pastry that consists of many thin alternating layers of dough and fat. This lamination is what gives puff pastry its light, crispy and flaky texture upon baking.

In this class you will learn how to make dough, laminate and create different uses for it, savory and sweet.

Pasta from Scratch – June 27, 2024

Love Pasta? What a great way to take this class to improve the flavor of your Italian meals! Once you taste your fresh pasta you will never want to buy pasta ever again. This is a hands-on pasta making class where you will learn basic dough technique, cutting pasta, and quick ravioli making.

101 Cake Decorating – July 11, 2024

Do you feel intimidated to cut, fill and decorate your cake? In this class we will show you the basics of beginners’ cake decorating. Make your own buttercream and decorate your cake, we will show you tips on how to make it smooth and perfect, as well as piping technics like rosettes, shells, scrolls and buttercream roses.

Choux Pastries – July 18, 2024

Choux (pronounced “shoo”) is a type of rich pastry dough used for making items such as éclairs, cream puffs (profiteroles), gougères and beignets, among others. It is characterized by a crispy outer shell with a light, airy interior

A macaron or French macaroon is a sweet meringue-based confection made with egg whites. They are delicate sandwich cookie with a crisp exterior. Filled with ganache, jelly or buttercream

Tarts – Sep 5, 2024

A tart is a baked dish consisting of a filling over a pastry base with an open top not covered with pastry. The pastry is usually shortcrust pastry; the filling may be sweet or savory, though modern tarts are usually fruit-based, sometimes with custard. You will learn how to make the tart dough to make a fruit tart, frangipane tart and chocolate salted caramel
